in about a month there is a very good chance i'll have to drive from TN down to the south of TX for a job.  hoping i'll be able to stop in on my way through and see about this Aussie food.  Oh, and meet the Cap'n.  ;)

seriously, though, good to hear that place/job is still going well for ya!  being out of work is a shithole we've all been at before.

ok, I fibbed, but that statement is Golden.    "Cane's sauce" comes from "Raising Cane's", a chicken joint what got started by a couple of college type fuckers right at the north gates of LSU.   Only about 10 years old, it is now franchised and making gozillions selling FUCKING CHICKEN FINGERS.  Anyway, they have their own sauce, which is only a fucking remoulade, sans the capers.  People around here would freebase that shit if they could.   Simply put, its famous and all the rage.  So for this person to say what he did, is a high compliment, even if it is only a dipping sauce.     And yes, the recipe, like everything else on the menu, is 100% mine.  ;)
